A vampire's humanity?

I was just wondering a few things about a vampire's humanity. Is it a voluntary thing または do they eventually get desensitized and stop feeling? How many times did Stefan and Damon turn off their humanity? And how do あなた know it was off? How about other ヴァンパイア on the show?
