The most interesting to me; Cersei, Melisandre, Catelyn, Margaery and Olenna mostly.

It is really interesting to watch Sansa, an innocent girl, surrounded by her enemies 24/7. I admire her courage and at times, she would say something really badass :D
Dany is really interesting too, a young highborn girl becoming a Khaleesi. Arya, a highborn tomboy girl, forced to flee and travel with rapists, murderers, thieves and outlaws. Cersei, Brienne, Melisandre, Olenna, Ygritte and sometimes Margaery are really interesting.
