I don't think she will. She has a thing for Pete! However, there is always that pregnant prerogative. She could say yes because she feels like she needs someone. Still, she sort of has Cooper. Again, if she says yes to Sheldon, it would be a whole big doo da when Pete runs in on their wedding when the guy asks if there are any objections and that's always a crowd pleaser. Yet, I just don't feel Sheldon and Violet. I think there is a great friendship there, but that's it.
