i wouldn't rule out that he'd go back to his old look, but they said it takes hours for him to get into that makeup so my guess is they would prefer to have him keep his mr. gold look so that he doens't have to spend so much time getting ready

If it's his dark magic that makes him look that way (he didn't look that way before he became the dark one) which means he should have turned back when he brought magic to Storybrook. Since that didn't happen I doubt he'll turn back when the get to Neverland.
