I think Archaeology matches her perfectly because she loves adventure and finding lost treasures. History is also a good fit because she likes learning about the human race. Although Ariel loves singing I don't think she would pursue it as a career remember that in the movie she missed the concert to go and explore.

Ariel completely forgot about her concert to go explore...I think she'd rather study artifacts. She is fabulous singer and could be great in performing arts, but that doesn't mean she'd pursue it. She'd be most interested in Archaeology.
